Almond & Honey Briouates (12 pieces)

 

Ingredients:

  • 6 sheets of brick pastry
  • 150g almond powder
  • 60g granulated sugar
  • 2 tbsp orange blossom water
  • 3 tbsp water
  • 1 tsp ground cinnamon
  • 100g honey + 1 tbsp orange blossom water
  • Beaten egg for sealing
  • Sesame seeds for decoration (optional)

Preparation:

  1. Blend the almond powder with sugar and cinnamon. Chef’s tip: For a more flavorful filling, toast the almond powder in the oven for 5 minutes at 150°C.
  2. Transfer the mixture to a bowl, then add the orange blossom water and tablespoons of water while mixing until you get a moist, sand-like texture. Adjust the water if the filling seems too dry.
  3. Cut the brick pastry sheets in half. Fold each half in two, place a small amount of filling, and fold into a triangle shape. Seal the edge with beaten egg.
  4. Repeat until all ingredients are used.
  5. Deep-fry the briouates in hot oil for about 3 minutes on each side, then place them on absorbent paper.
  6. Once all the briouates are fried, gently heat the honey with a little orange blossom water. Dip each briouate in the warm honey, then place them on a cooling rack. Sprinkle with sesame seeds if desired.
