Gar’a M’asla – Moroccan Candied Pumpkin

 

Ingredients:

  • 1 kg pumpkin
  • 40g butter
  • 2 tbsp orange blossom water
  • 60g granulated sugar
  • ½ tsp cinnamon
  • A pinch of salt

Preparation:

  1. Peel the pumpkin, remove the seeds, and cut the flesh into small pieces.
  2. Cook the pumpkin either in the oven or by steaming until tender.
  3. Melt the butter in a pan, add the cooked pumpkin pieces, and sauté for a few minutes.
  4. Add the orange blossom water, sugar, cinnamon, and a pinch of salt.
  5. Let it caramelize over low heat until all the liquid has evaporated.
  6. Serve warm with bread. For extra flavor, you can add walnuts and/or raisins—the combination works beautifully!
